
Air Fryer Strawberry and Banana Oat Muffins
Ingredients (makes 6 muffins)
- ½ cup rolled oats
- ½ cup self-raising flour
- 1 ripe banana, mashed
- 1 egg
- ½ cup Greek yogurt (or diary alternative)
- ¼ cup New Forest Fruit Snacks – Strawberry (chopped if large)
- 1 tsp baking powder
- 1 tbsp honey or agave syrup
Method
- Preheat air fryer to 160°C (320°F).
- In a bowl, mix oats, self-raising flour, baking powder, mashed banana, egg, yogurt, and honey until combined.
- Fold in New Forest Fruit Snacks gently.
- Spoon mixture into silicone muffin moulds (fill ¾ full).
- Air fry for 10–12 minutes, until golden and firm to touch.
- Cool slightly before serving — they’ll firm up as they rest.
Goat Cheese & Raspberry Salad with Honey-Balsamic Drizzle
Serves: 2
Ingredients
- 2 large handfuls rocket or mixed baby leaves
- 50g soft goat cheese (crumbled)
- 2 tbsp chopped walnuts (toasted for extra crunch)
- 2 tbsp New Forest Fruit Snacks – Raspberry
- 1 tsp honey
- 1 tbsp balsamic vinegar
- 1 tbsp olive oil
- Pinch of sea salt & cracked black pepper
Method
- Arrange rocket or mixed leaves in a shallow serving bowl or plate.
- Add toppings: Scatter over crumbled goat cheese, toasted walnuts, and the New Forest Fruit Snacks Raspberries.
- Make the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
- Drizzle the honey-balsamic dressing just before serving for a glossy, gourmet finish.
Breakfast Recipe: Berry Burst Overnight Oats
Ingredients (serves 2)
- ½ cup rolled oats
- 1 cup almond milk (or milk of choice)
- 1 tbsp chia seeds
- ½ cup plant based yogurt ( or yoghurt of your choice )
- ½ cup New Forest Fruit Snacks – (Mix) Berries ( 1 pack of strawberries and one pack of raspberries)
- 1 tsp honey or maple syrup (optional)
- Fresh mint to garnish it extra dry berries
Method
- In a jar or bowl, combine oats, milk, chia seeds, and yogurt. Stir well.
- Fold in New Forest Fruit Snacks and honey.
- Cover and refrigerate overnight (or at least 4 hours).
- In the morning, top with extra fruit snacks and a sprig of mint before serving.
