Air Fryer Strawberry and Banana Oat Muffins

Ingredients (makes 6 muffins)

  • ½ cup rolled oats
  • ½ cup self-raising flour
  • 1 ripe banana, mashed
  • 1 egg
  • ½ cup Greek yogurt (or diary alternative)
  • ¼ cup New Forest Fruit Snacks – Strawberry (chopped if large)
  • 1 tsp baking powder
  • 1 tbsp honey or agave syrup

Method

  1. Preheat air fryer to 160°C (320°F).
  2. In a bowl, mix oats, self-raising flour, baking powder, mashed banana, egg, yogurt, and honey until combined.
  3. Fold in New Forest Fruit Snacks gently.
  4. Spoon mixture into silicone muffin moulds (fill ¾ full).
  5. Air fry for 10–12 minutes, until golden and firm to touch.
  6. Cool slightly before serving — they’ll firm up as they rest.

 

 

Goat Cheese & Raspberry Salad with Honey-Balsamic Drizzle

Serves: 2

Ingredients

  • 2 large handfuls rocket or mixed baby leaves
  • 50g soft goat cheese (crumbled)
  • 2 tbsp chopped walnuts (toasted for extra crunch)
  • 2 tbsp New Forest Fruit Snacks – Raspberry
  • 1 tsp honey
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • Pinch of sea salt & cracked black pepper

Method

  1. Arrange rocket or mixed leaves in a shallow serving bowl or plate.
  2. Add toppings: Scatter over crumbled goat cheese, toasted walnuts, and the New Forest Fruit Snacks Raspberries.
  3. Make the dressing: In a small bowl, whisk together olive oil, balsamic vinegar, honey, salt, and pepper.
  4. Drizzle the honey-balsamic dressing just before serving for a glossy, gourmet finish.

 

 

Breakfast Recipe: Berry Burst Overnight Oats

Ingredients (serves 2)

  • ½ cup rolled oats
  • 1 cup almond milk (or milk of choice)
  • 1 tbsp chia seeds
  • ½ cup plant based yogurt ( or yoghurt of your choice )
  • ½ cup New Forest Fruit Snacks – (Mix) Berries ( 1 pack of strawberries and one pack of raspberries)
  • 1 tsp honey or maple syrup (optional)
  • Fresh mint to garnish it extra dry berries

Method

  1. In a jar or bowl, combine oats, milk, chia seeds, and yogurt. Stir well.
  2. Fold in New Forest Fruit Snacks and honey.
  3. Cover and refrigerate overnight (or at least 4 hours).
  4. In the morning, top with extra fruit snacks and a sprig of mint before serving.
